Slice the strawberries and tomatoes into chunks.
Shave or slice the fennel bulb into wafer-thin slices - Try using a vegetable peeler to make this easier.
Toss the fennel with the strawberries and tomatoes. Dress the mix with olive oil, red wine vinegar and season to taste with salt and pepper.
Heat a nonstick pan over medium heat, frying the halloumi for 30 seconds on each side, or until golden brown.
Remove the halloumi from the pan and throw in with the salad. Top with the prosciutto, micro-herbs and fresh basil.
