Ingredients
3 cups (500g)
grated apple (preferably Granny Smith)
2 cups (180g)
rolled oats
11/2 cups (150g)
desiccated coconut
1/2 cup (175g)
honey
2 tsp
vanilla extract
2/3 cup (160ml)
coconut oil

eggs, lightly whisked
2 cups (325g)
wholemeal self-raising flower
2 tsp
cinnamon, ground
1 cup (250ml)
Greek yoghurt
3/4 cup (120g)
sultanas *optional

Preheat the oven to 180°C (356°F).

Combine the grated apple, oats, coconut, honey and vanilla in a large bowl and mix together. Reserve 1 cup of the apple mixture and set aside for 10 minutes.

Add the oil, eggs, flour, cinnamon and sultanas* to the remaining apple mixture and combine. Divide the mixture between a lightly greased muffin tin and top with the reserved apple mixture. 

Bake for 20 minutes or until cooked (test with a skewer). Allow to cool for 5 minutes in the tin before turning out onto a wire rack to cool completely.

Serving suggestion: Enjoy with some Greek yoghurt.
